Almost Indescribably Delicious Cheesecake

Graham Cracker Crust:

1 1/2 C. crushed graham crackers (11-12 crackers)

1/3    C. butter

2/3    C. sugar

Crush graham crackers inside gallon size zip-lock bag with rolling pin. Melt butter over medium low heat add sugar and mix Then blend in graham crackers. Stir Til Toasted (optional).

 Cream Cheese Filling:

6-8 oz. packages of cream cheese at room Temp.

1 1/2  C. sugar

1/4    C. sifted flour

1 T. vanilla

6 eggs

1/2 tsp. salt

1/2 tsp. ground coriander

1/2  C. heavy cream or whipping cream

1 can of pie filling of your choice (We Think blueberry is DIVINE!)

In large bowl beat cream cheese Til smooth, fluffy. In a small bowl combine sugar, flour, salt and coriander. Gradually blend into cream cheese. Blend vanilla and eggs in small bowl. Slowly beat egg mixture into cheese mixture until just blended. Stir in cream Til just blended. Pour half of filling evenly over crust. Add about 1/2 of pie filling and gently blend into filling. Spoon remaining filling over The first half of filling To cover all pie filling. Add remaining pie filling in one large circle over Top with small one in center. Take butter knife and pull Through The fruit and filling  Til center. Repeat with every other cross section you make. Can also if you like pull from center To crust To get a different affect.

Bake 1 1/4 hours in preheated oven ( 325  F. ) Til knife comes out clean.  

Place on rack To cool Then remove To fridge for 24hrs. Slip butter knife around inside of springform pan and crust To ensure pan is removed without breaking crust. Remove sides of springform pan and serve!

1 Graham Cracker Crust

4 C. peeled, Thinly sliced apples

1-8 oz. pkg Cream Cheese, softened

1/4 C. Brown Sugar or 3 T. Honey

1 Egg, beaten

1/4 tsp. Vanilla

Topping: 1/3 C. Brown Sugar or 1/4 C. Honey

1/2 tsp. Ground Coriander

1/2 C. Sliced Almonds

Arrange graham cracker crust in pie plate so

That it will not be above The pie filling.

Arrange apples evenly on a baking sheet, and

bake at 400 deg. for 15″ or until tender.

Apples can also be cooked in a large skillet

with a little water.

      Beat cream cheese until smooth; gradually

add 1/4 C. sugar (3 T. honey), beating well.

Add egg and vanilla; beat well.

Spread mixture evenly on crust and Top with


          Combine 1/3 C. sugar (1/4 C. honey) and

1/2 tsp. coriander. Sprinkle over apples.

Bake at 400 deg. for 35 minutes. Sprinkle

almonds on Top of pie; bake 10″ more or

Til almonds are toasted. Let cool on rack.

This cheese is excellent on breads, on pizzas, in quiches etc! Yum!

Preperation time: 20 min.


8  T. of Corn Starch

1 1/4 c. of whole milk

1 cup of butter 

2 cups of mozzerela, grated 

2 cups of farmer cheese, grated

1 cup of  Mexican creme without the whey 

salt to taste


In sauce pan mix with the first 3 ingredients (corn starch, milk and butter) together then place on stove over low to medium heat. Stir until thickened. Add the cheeses to the first 3 ingredients stir until melted. 

Remove from heat and place in mixer beating for 5 min. add the Mexican creme  and salt and beat until smooth. Chill in refrigerator for 6 hours, or until thick.

Let chill for 6 hours in refrigerator, or until thickened.

1/2 lb. lean ground beef
2 large onions, chopped
1 can (1 lb. 13 oz.) solid pack tomatoes
1 cup diced carrots
1 cup diced celery
1 cup diced potato
1/2 lb. zucchini, diced
1 clove garlic, minced or mashed
1 small bunch parsley, chopped
9 cups water
1 bay leaf, crumbled
Generous pinch each of Thyme,
Marjoram, and basil.
Salt and pepper to taste
2 cups broken uncooked spaghetti
2 cans(1 lb. each) cooked dried lima beans
1/4 cup grated Parmesan cheese

In a large kettle, combine the ground beef,
onions, tomatoes, carrots, celery, potato,
zucchini, garlic, parsley, water, and the
seasonings. Bring to a boil, then cover and
simmer gently for an hour, stirring
frequently. Just before serving add lima beans
(including liquid) and cheese. Taste and season
with more salt and pepper if necessary.
Makes about 4 quarts of soup.

Delicious and fairly addictive cheese cookies/crackers. Great for get togethers.

1-8oz pkg xtra sharp shredded Cheddar

1/2 c. butter-melted

1 1/4 c. buckwheat flour

Black sesame seeds

Mix all by hand and roll into 
Several logs and refrigerate for 1 hour.
Slice thin, dip 1 side into Sesame seeds 
and bake in 400° oven for 15min.
